Chicken and Wild Rice Salad

  • 3 boxes (6 oz. pkg) long grain and wild rice mix, cooked
  • 1 large jar marinated artichoke hearts, cut bite size
  • 3-6 cups cubed, cooked chicken (depends on how much you want)
  • 1 bell pepper, chopped
  • 1 cup chopped celery
  • 1 cup chopped green onions
  • 1 cup chopped green olives

Dressing

  • 1-1/2 cups mayonnaise
  • 3 T lemon juice

Mix in a large bowl and enjoy! (This is intended to be served chilled)

Chinese Chicken Salad Dressing

  • ¾ cup sugar
  • ¼ Tbsp pepper
  • 2 Tbsp salt
  • ¾ cup + 2 Tbsp vinegar
  • 1½ cups oil
  • 6 Tbsp sesame oil

Melt sugar and salt with the vinegar in a saucepan on low heat. Combine with the rest of the ingredients.

Broccoli Salad

  • 1 bunch broccoli
  • 1 cup cheddar cheese, shredded
  • ¼ cup onion, diced
  • ½ lb. bacon, crisp cooked and crumbled

Dressing:

  • ½ cup mayonnaise
  • ½ cup sugar
  • 1 Tbsp vinegar

Cut broccoli into bite-size pieces.  Mix together broccoli, onion, cheese, and bacon in large bowl.  Mix mayonnaise, sugar, and vinegar together.  Pour dressing over broccoli mixture and mix well.  Chill.
