Coffee Jello

  • 2 14oz. envelopes of unflavored gelatin
  • 1/2 c cold coffee or kahlua
  • 3 c hot coffee
  • 1/4-3/4 c sugar
  • pinch of salt

Combine gelatin and cold coffee, let sit for 10 minutes. Add hot coffee, sugar, and salt. Stir until sugar is dissolved. Pour into individual dishes or flat pan. let sit in fridge. Serve with ice cream or cream.

*Makes 6 small servings

Caramel Sauce

  • 1½ sticks butter
  • 1½ cup brown sugar
  • ½ cup heavy cream

In a saucepan, combine all ingredients.  Bring to a boil stirring constantly until the sugar is dissolved.  Remove the pan from the heat.

Cool before serving.  This sauce is also great over popcorn.

Green Tea Jello

  • 3 pkgs unflavored gelatin
  • 9 Tbsp water
  • 3 cups milk
  • 1 cup sugar
  • 1½ Tbsp matcha
  • 2 Tbsp hot water

Dissolve gelatin in water. Heat milk and sugar. Combine with gelatin.

Mix green tea and 2 Tbsp hot water. Add to milk mixture.

Pour through a strainer into a 13×9″ pan. Chill until set.

Mochi

  • 1 box (16 oz) mochiko
  • 3 cups sugar
  • 1 Tbsp baking powder
  • 2 cups milk
  • ½ cup melted butter/margarine
  • 3 eggs, beaten
  • 1 tsp vanilla
  • 1 can (12 oz) canned coconut milk

Preheat oven to 350°.

In a large bowl, combine ingredients, mix well with a spoon. Pour into a well greased 13×9″ pan. Bake one hour or until toothpick inserted in center comes out clean. Cool and cut into squares.
